Halibut over Rice Pilaf topped with Creamy Spinach
I have to admit, I was not a huge fan of fish when I was younger and I'm still not (gasp!). Halibut and tuna has changed that. This dish blew my mind - I was able to leave the fish hardly untouched except for a little bit of salt and olive oil (good fish/meat don't shouldn't need a lot) and compliment it with a simple rice pilaf and a creamy spinach. I hope you try and enjoy just as much as I did! P.S. this was inspired by my 7 month old as I wanted to introduce fish to him early and guess what? He LOVED it.
